Sheet Pan Chicken Fajitas | High Protein Meal Ideas

You know how much I love a sheetpan chicken thigh recipe! This recipe is a great way to cook dinner OR double up and use it as a meal prep for lunch!


You will need:

  • Chicken thighs

  • Bell peppers

  • Onions

  • Tortillas or Rice

  • Sour cream


Directions:

  1. Preheat your oven to 425

  2. Cut your onion and bell peppers into thin slices and arrange onto a sheet pan.

  3. Season your chicken thighs with salt, pepper, paprika, chilli powder on BOTH SIDES.

  4. Cook on 425 for 25 minutes.

  5. Serve over rice or in a tortilla & garnish with sour cream or guacamole.

  6. Enjoy! :)
