Unstuffed Peppers| High Protein Meal Ideas

I lived off of this recipe in my early postpartum days! This recipe is simple, high protein, and absolutely delicious!


You will need:

  • Ground beef

  • Bell peppers (frozen and pre-cut is fine!)

  • Onions

  • Jasmine Rice

  • Shredded Cheese

  • Sour Cream


Directions:

  1. Start cooking your rice, this step will take the longest! (I use a rice cooker for less hassle)

  2. In a large skillet over medium heat begin cooking down your onion with a bit of oil and a pinch of salt

  3. When onions get nice and soft, begin browning your ground beef.

  4. Season your beef as you cook, I like to use salt, pepper, and chilli powder.

  5. When beef is fully cooked drain the excess liquid and then add in your peppers.

  6. Once peppers have cooked down to a softer texture you're all done!

  7. Serve over jasmine rice and top with shredded cheese and sour cream.

  8. Enjoy!
